Beberapa hari yang lalu, kebetulan saya membeli banyak ikan tenggiri di toko ikan langganan. Awalnya sy ga ngerti klo ikan yg sy beli itu adalah tenggiri. Karena bentuknya sepintas mirip ikan tongkol dan harganya murah, sy beli 4 ekor (kira-kira 1kg). Banyak ya...hehe....mumpung murah :)
Pas pagi2 buka blog, jd ngeliat postingan Mbak Ika Damayanti, tentang otak-otak tenggiri. Akhirnya sy buka kulkas, ngecek ikan yg kmrn sy beli. Di labelnya, tertulis sawara. Searching di google, ternyata sawara = tenggiri = mackerel. Hmm..... tiba-tiba jadi kepengen mbikin nugget tenggiri. Saya tambahin wortel, sekalian buat setoran monthly event-nya Pawon Ibu untuk bulan ini yaitu Carrot Month. Thanks Mbak Ika ya buat inspirasinya, kapan-kapan pengen nyobain resep otak-otak tenggirinya ^^
Nugget Tenggiri Wortel (Mackerel Carrot Nugget )
Ingredients :
450 gr ikan tenggiri tanpa kepala, buang
durinya. potong kecil2 (450 g mackerel fillets, cut into small pieces)
150 gr wortel, kupas dan potong kecil2 (150 g carrots, peeled and cut into small pieces)
3 butir telur (3
eggs)
6 sdm masing-masing untuk tepung
kanji/maizena/kentang dan tepung panir
(kalo suka agak lembek bisa dikurangin) (6 tbsps
each for tapioca starch/corn starch/potato starch and breadcrumb/panko if you
like less firm you can reduce the the starch and breadcrumb)
1 1/2 sdt bawang putih halus (1 1/2 tsps mashed garlic)
1/2 sdt merica bubuk (1/2 tsp ground white pepper)
1- 1 1/2 sdt garam (sesuai selera) (1- 1 /2 tspssalt or as you like)
sedikit gula pasir (sugar to taste)
Pelapis (Coating) :
tepung panir/panko (panko/ bread crumb)
telur 1 buah, kocok lepas (1 egg, beaten)
Method :
1. Haluskan ikan tenggiri, wortel dan
telur dengan blender atau food processor.

2. Masukkan bumbu. Aduk rata dalam adonan.

3. Tambahkan tepung kanji dan tepung roti,
aduk sampai rata.

4. Tuang ke dalam loyang yang dioles
mentega. Ratakan.

5. Kukus 25-30 menit. Tunggu dingin, iris
sesuai selera.
(With a steamer, place the pan and steam for 25-30 minutes. Remove from steamer and let cool down before slicing into smaller pieces that you like)

6. Masukkan potongan2 nugget tadi ke dalam
kocokan telur, gulingkan di tepung roti.
(In a bowl, beat an egg. In a different plate, place breadcrumb/panko. Roll in a nugget cut then transfer in to breadcrumb/panko plate. Make sure all the surface is covered by the panko. Redo these steps until all cut nuggets are done)

7. Masukkan frezer min 10 menit agar
tepung roti nempel dan tidak jatuh ketika digoreng.
(Arrange nuggets on a clean tray/dish/baking pan. Keep in the freezer for 10 minutes to make the breadcrumb stick on and not falling apart when we fry them)

8. Goreng dengan api sedang hingga kuning kecoklatan. Sajikan dengan saus sambal sesuai selera.

Alhamdulillah nugget-nya gurih banget ternyata. Tanpa saya beritahupun, suami langsung bilang, 'ini dari ikan ya, gurih...' dan ternyata anak-anak juga doyan banget. Sebagaimana doyannya mereka klo makan nugget ayam. Untuk campuran wortelnya tidak terasa langu sama sekali. Hanya saja warna nuggetnya jadi kekuningan. Oya, resep nugget ini bisa di modifikasi sesuai selera. Ikannya bisa diganti dengan ikan lain, bisa juga ditambah tahu putih, daging ayam giling, dan sayuran lainnya. Selamat Mencoba ^^
